Low Carb Potato Dish – Turnip Gratin

I found a version of this on a low carbohydrate lifestyle website, and played in the kitchen some today to come up with my own version. And, If I do say so myself, it turned out BEAUTIFULLY (and quite tasty!)

For anyone else trying to cut back on carbs, but not on wonderful comfort foods, give this one a whirl.

Turnip Gratin Low Carb Recipe

Turnip Gratin Low Carb Dish

A pound of raw turnips
Large onion
1/4 cup chopped fresh chives
1 cup of heavy cream
Parsley or Cilantro
Salt & Pepper
Cup of shredded sharp cheddar

Grease a casserole dish with coconut oil and set aside. Peel the onion and the turnips. Slice both as thinly as possible.

Layer the bottom of the casserole dish with turnips. Next add a layer of onions. Dribble 1/3 of the heavy cream. Add chives.

Add salt, pepper and parsley/cilantro.

Add a thin layer of sharp cheddar, another layer of turnips, onions, and another 1/3 of the heavy cream. Add another layer of cheese, parsley, salt & pepper, turnips onions and the rest of the cream.

Top with the last of the cheddar and put in the oven at 400 degrees for 35-40 minutes.

Yes, it’s really THAT easy. Now, for a secret…

I’ve never been a fan of turnips. I never CHOOSE to eat them. But this dish is amazing! I think I might be a closet turnip fan. 🙂
